Its violet rind results from immersion in highly tannic, anthocyanin-rich Monastrell "Doble Pasta" wine, which also imparts complex flavors. Unlike the standard PDO cheese aged 2 months, the Reserva's extended affinage creates a firm, creamy, crystalline texture with nuanced sweet, nutty, and fruity notes, lacking typical "goaty" sharpness.
