Made from pasteurized cow's milk and cream concentrated via ultrafiltration, it contains 71–75% fat in dry matter and boasts a silky, smooth texture with a mild, buttery flavor. It uses microbial rennet, ripens in 2 weeks to 2 months, and is pasteurized for safety. The cheese is lactose-free, lacks AOP designation due to its process, and pairs well with sparkling wines, fruit lambics, and fresh breads. Spoilage includes slip skin, ammoniation, molds, and rancidity.
