Produced by Central Quesera Montesinos and branded by Forever Cheese (US importer), it combines Spanish goat curd with Italian PDO pesto ingredients. Aged for six months, it features a creamy texture due to high fat content and the oil in pesto, with a balanced mild flavor profile blending goat acidity and herbal pesto notes. It uses microbial rennet and is non-DOP due to added pesto. Optimal pairings include Sauvignon Blanc, Albariño, Monastrell, and saison beers.
