The cheese undergoes 6–8 months aging in controlled conditions and uses vegetarian microbial rennet. Promontory is creamy, buttery, and fruity with a close, firm texture. Production shifted in 2024 to a partnership with Gossner Foods for scaling, while affinage remains in Utah. It holds B Corp certification and numerous awards, serving as a base for flavored variations and pairing well with wines, beers, fruits, and charcuterie.
