Aged less than 30 days, it differs from aged cheddars by retaining high moisture and lacking proteolysis. Awarded "Best in Class" in the 2022 World Championship Cheese Contest, it melts well for cooking and pairs well with light reds, crisp whites, ales, lagers, and comfort foods.
