It uses Certified Meadow Milk from grass-grazed cows, yielding rich beta-carotene color and complex flavors. Shifted to vegetarian microbial rennet in 2020, it is vegetarian-friendly and lactose-free. Robusto features a dense protein matrix with distinctive tyrosine crystals from proteolysis, offering a sweet, savory flavor with butterscotch and nutty notes. Positioned as accessible luxury, it’s distributed globally via DMK Group and Best Cheese Corp., favored for table use, grating, and pairing with bold wines and beers.
