Made from 100% pasteurized cow’s milk via a washed-curd process by FrieslandCampina, it uses vegetarian microbial rennet. Aged 4-6 weeks, its red wax coating preserves moisture and mildness. The cheese has a sweet, creamy flavor with a smooth, pliable, springy texture, and about 40-45% moisture. It pairs well with light wines, amber ales, fruits, nuts, and meats and is ideal for melting culinary uses.
