Aged for a minimum of 12 months in a historic 1906 warehouse without artificial climate control, it develops intense nutty, fruity, and creamy flavors with crunchy tyrosine crystals. The cheese has low moisture (30–35%) and a soft, creamy texture. Reypenaer follows Gouda Holland PGI standards but emphasizes its artisanal ripening. It pairs well with oaked Chardonnay, Merlot, Trappist beers, and complementing foods like apples, rye bread, and mustard.
