It uses microbial rennet, is ripened in special caves replicating historic microclimates, and has 50% fat in dry matter. The cheese features a dense, creamy texture with fine protein crystals, and a complex flavor profile of wood, walnut, sea salt, mild acidity, and slight sweetness.
