TĂȘte de Moine AOP is a distinctive Swiss cheese originating from the Bellelay Abbey (1136), now protected under AOP regulations restricting production to the Jura region. Known for its cylindrical shape, semi-hard smear-ripened rind, and unique serving via the Girolle (invented 1981), it combines monastic tradition and modern dairy science. Made from raw, grass-fed milk without silage, it undergoes copper vat processing, natural calf rennet coagulation, brining, and maturation on spruce boards. Emmi distributes grades aged 75 days to 6 months. Its flavor is nutty, spicy, with a characteristic washed rind aroma, best served cold as shaved rosettes to enhance taste and texture.
