Blue Shropshire by Long Clawson Dairy is an award-winning, visually striking blue-veined hard to semi-hard cheese with a fudgy, buttery texture and a nutty, caramel flavor profile. Despite its name, it originated in Scotland but is now produced mainly in Leicestershire, Nottinghamshire, and Derbyshire. Made from pasteurized Holstein-Friesian cow’s milk using vegetarian rennet and annatto for color, it matures for 10–12 weeks with Penicillium roqueforti mold. Produced by a farmer-owned cooperative since 1911, it offers a mellow, creamy alternative to Stilton, ideal for novices and connoisseurs alike, pairing well with fortified wines, robust reds, and stouts.
