CLADDAGH-BO WITH IRISH PORTER
Claddagh-Bó with Irish Porter is an artisanal semi-hard Irish cheddar from Limerick's Golden Vale, made exclusively from pasteurized, grass-fed cow's milk. Produced at the Old Irish Creamery in Effin, it is aged 10–12 months using vegetarian microbial rennet. The cheese features distinctive marbled veins from Irish porter infusion, offering a savory, malty, tangy flavor and a firm, smooth, and friable texture. Quality is ensured by strict standards including Bord Bia's SDAS. It pairs well with Zinfandel, Rioja, stout beers, and charcuterie. Its name symbolizes Irish heritage, combining local dairy tradition with historic monastic influences.
