This process creates a "silky," smooth texture with high protein and calcium content, ripening in 2-3 weeks. Made primarily from Saanen and Alpine goat breeds’ pasteurized milk, Florette features a distinctive hexagonal shape and thin bloomy rind. Its milder goat flavor suits entry-level consumers. Florette pairs well with crisp whites and sparkling wines or wheat and saison beers. It faces challenges like the "pink defect" from thermophilic bacteria but remains a widely available, vegetarian-friendly gourmet cheese.
