Its three-year aging promotes proteolysis and lipolysis, yielding a friable texture, complex savory, umami, and sharp flavors, and characteristic calcium lactate crystals. Thermalization preserves native enzymes and beneficial bacteria, differentiating it from pasteurized cheddars. Vacuum-sealed blocks ensure uniform texture.
