Bijou is an artisanal, soft-ripened goat cheese produced by Vermont Creamery in Barre, Vermont. Made from pasteurized Saanen goat milk, it matures over 30 days, developing a wrinkled Geotrichum rind and a dense, creamy center. The cheese features a piquant, evolving flavor profile, from fresh and sweet to earthy and sharp, supported by a tender, brain-like rind. Bijou uses microbial rennet and is part of a sustainable B Corp-certified operation sourcing milk from multiple family farms. It pairs well with Gewürztraminer, Sauvignon Blanc, Belgian Tripels, and complements jams and nuts. The name is pronounced "BEE-zhoo."
