FENNEL BLUE
Fennel Blue is an artisanal American blue cheese from Point Reyes Station, Marin County, California, produced using pasteurized Holstein-Friesian cow's milk from a closed, organic herd. It features a semi-soft, fudgy texture with a natural rind and is flavored with fennel seeds, providing mild blue pungency and aromatic sweetness. Traditionally coagulated with animal rennet, it is transitioning to microbial rennet from 2026. Aged a minimum of 90 days under aerobic conditions, it contains about 50% moisture and 50-60% fat in dry matter. Fennel Blue pairs well with wines like Riesling and Pinot Noir, and beers like Brown Ales and Stouts.
