It features a semi-soft, fudgy texture with a natural rind and is flavored with fennel seeds, providing mild blue pungency and aromatic sweetness. Traditionally coagulated with animal rennet, it is transitioning to microbial rennet from 2026. Aged a minimum of 90 days under aerobic conditions, it contains about 50% moisture and 50-60% fat in dry matter.
