It features a washed-curd process yielding a creamy, mild base with 40-50% moisture and 48% fat in dry matter. The cheese blends traditional Gouda methods with fermented black garlic (1.5%), creating a savory, umami-rich, sweet-balsamic flavor and smooth, pliable texture. Produced by Royal A-ware in the Netherlands under PGI protection, it uses microbiological rennet for vegetarian suitability. The product is sustainable, meltable, pairs well with wines and beers, and requires careful spoilage distinction.
